How materials affect pasta quality
Italian ingredients vs conventional
Pastificio dei Campi uses 100% Italian durum wheat, providing a richer, more aromatic flavor profile. Industrial pastas often use blended grains, resulting in a less distinct taste.
The use of bronze-die extrusion creates a rough texture that clings to sauces, unlike Teflon-die pastas which repel sauce, affecting overall flavor enjoyment.
Slow drying at low temperatures preserves the pasta's structural integrity, ensuring a firm al dente bite that mass-produced pastas can't replicate.
Experience the exceptional with every bite of this Rigatoni.

Pastificio dei Campi's origin story
From tradition to modern excellence
Gragnano sits in a narrow valley between the Lattari Mountains and the Gulf of Naples, and its streets were engineered in 1650, under Prince Cosimo Caracciolo, specifically to act as wind corridors. The warm, humid sea breeze from the Gulf and the cool Alpine draft from Monte Lattari were funneled down the main via from morning until dusk, drying freshly cut pasta strands hung across the street at just the right speed: slow enough to preserve the wheat's protein and flavor, fast enough to prevent spoilage. This was not a happy accident. It was deliberate infrastructure for a deliberate craft.
In November 1980, the Irpinia earthquake struck Campania with a magnitude of 6.9. The region rebuilt slowly. Rather than modernize into the high-temperature flash-drying that had swept industrial pasta production, Gragnano's pastifici returned to what they had always done: bronze dies, 36-to-72-hour slow-drying, and durum semolina from the volcanic plains nearby. The discipline held. In 2013, the European Union awarded Gragnano the IGP designation — Indicazione Geografica Protetta — legally protecting the name for pasta made only within the municipality, under these specific methods. Di Martino has been part of Gragnano since 1912. Every box carries that continuity.

I have sent the gift boxes twice now.
Mixed reviews on the truffle sauce, one family loved it and the other hated it. I guess you have to be pro mushroom before opening that jar. The olive sauce was enjoyable but once again you better really like olives.
All the other sauces only received exceptional reviews.
I also purchased the Ketchup which I received this about
“The ketchup is amazing”
Definitely will be a returning customer.
I love it just can’t order to often sense I can’t eat all of it but will get more when I finish it
After tasting many variations of Italian red sauce, Eggplant Parmesan is the clear winner. I love its thickness and the flavor of the delicious tomatoes. I think the eggplant tops the flavor off. I now have a subscription to have this sauce delivered regular basis.
Wow we were so delighted by this sauce. Baby chunks of soft tender eggplant- perfumed the sauce beautifully. I make eggplant Parmesan from scratch but this sauce made my job much easier with the same ( if not better) flavor, without all the prep. Definitely worth the money. Will be ordering this again!! 🔥👏🏻👏🏻
I do need to cancel this order. Like the product, but only wanted a one time order. So please discontinue this order! Thank you
