Their buttery flavor and meaty texture is the heart and soul of this sauce. Gently simmered with Italian tomatoes and caper flower buds, a dash of red pepper is thrown in at the end for a tiny bit of heat.
Pastifico de Campi's Tortiglioni Pasta: Made in the world famous Gragnano region of Italy, bronze-extruded and slow-dried for days to create one of the best pastas in the world. A close cousin of rigatoni, this spiral pasta is named after the Latin word for "twist." This maccherone-style pasta is one of the oldest and is named after the Latin for "twist." However unlike rigatoni, tortiglioni tubes have larger and deeper groves.
