This ancient Napoli cut (originally known as vermicellari) dates back to 1284 AD. Like most cuts, this cut is named after their shape similar to small worms "vermi." Think of them like a very thin spaghetti or sister to an Angel hair pasta cut. Simple sauces favoring high quality tomato sauces, fresh basil or a sprinkling of other herbs and spices work well with Vermicelli. Or fry up a handful of strands for a crunchier pasta frittata otherwise known as the Italian omelette.

Maribeth Meluch Pasta really held the sauce. I thought it was a bit thicker than typical vermicelli, but still good.
