These ribbons of pasta are bronze-drawn giving them a rough surface ideal for holding on to a delicious sauce. Wider then linguine, this cut was named after the ribbons that were once used to hem clothes. Their large surface area makes fettucce ideally suited for spicy sauces, fish or a thick gravy. In 1857 an earthquake struck this famous city, and it was re-built to be ideal for the hanging and drying of the local artisan's handmade pasta.
