This hard, crumbly cheese was originally inspired by modifying a recipe for Parmesan Reggiano. With a hard, nutty flavor and nutty flavor, Prima Donna has both a more youthful texture (higher moisture content) but salt crystals spread throughout the wheel (the result of aging). The result is a nutty flavor and crunchy texture that normally occurs in older, more expensive goudas.

Ingredient(s): Pasteurized cow milk, salt, cheese culture, enzyme
Storage Tips: Refrigerate any cheeses and meats in a drawer close to where most of the produce is kept. After each time that you slice the cheese, re-wrap it with fresh plastic wrap to extend the shelf life. While some chefs will freeze a slice of blue and then grate it over a salad before serving, Chef's Mandala doesn't recommend freezing cheeses in general.

Flavors & Uses

For a cheese plate serve with a washed rind Chimay and Harbison. Or pair with a Gouda Truffle and Leyden. Sides that work include a nice red cabernet sauvignon or pinot noir, some Dalmatian fig spread, crackers, garlic stuffed olives and a dab of honey.
