This orange, cannonball-shaped cheese was briefly banned by the FDA for a completely illogical argument. Today a version is imported into the States from Normandy that is close to the real cheese. Invented by the French originally as a substitute for Edam, it was infused with a natural orange dye so as to stand out. Mimolette is unique for its color and is good as both a table or an ingredient in a cooked or melted dish.

ORIGIN:NETHERLANDS
DIMENSIONS: (H x W x L) 12 x 6 x 9 inches
ITEM WEIGHT: 0.5 lbs

Ingredient(s): Pasteurized cow milk, salt, cheese cultures, rennet (animal), annatto
Storage Tips: Refrigerate any cheeses and meats in a drawer close to where most of the produce is kept. After each time that you slice the cheese, re-wrap it with fresh plastic wrap to extend the shelf life. While some chefs will freeze a slice of blue and then grate it over a salad before serving, Chef's Mandala doesn't recommend freezing cheeses in general.

For a great cheese plate serve with an Ossau Iraty and Leonara. Or pair with a Fromage d'Affinois and Reblochon. Popular sides include dried figs, dill pickles, crackers and marcona almonds.
