Hand-made in the Loire valley, 4 generations of the Jacquin family have made this delicious cheese. With a slightly tart tang indicative of goat's milk, these snow white cylinders are mild and friendly to first time tourists to cheese. Aged for only a month, these fresh cheeses are best used on cheeseboards or in simple recipes that don't require cooking such as salads.

Storage Tips: Refrigerate any cheeses and meats in a drawer close to where most of the produce is kept. After each time that you slice the cheese, re-wrap it with fresh plastic wrap to extend the shelf life. While some chefs will freeze a slice of blue and then grate it over a salad before serving, Chef's Mandala doesn't recommend freezing cheeses in general.

For a cheese plate serve with a Humboldt Fog or Kunik and Iraty. Or embrace France and pair with a Langres and Comte Reserve. Pair a beautiful Jacquin cheese with some pitted green olives, crackers, carrot sticks, olive oil and cubed pieces rustic bread.
