Storage Tips: Refrigerate any cheeses and meats in a drawer close to where most of the produce is kept. After each time that you slice the cheese, re-wrap it with fresh plastic wrap to extend the shelf life. While some chefs will freeze a slice of blue and then grate it over a salad before serving, Chef's Mandala doesn't recommend freezing cheeses in general.
For a cheese plate pair with a Pont l'Eveque and Ossau-Iraty. Or serve with a Midnight Moon and Kunik. Humboldt Fog pairs well with orange flavored Dalmatian fig spread.


I was excited to try this popular cheese but after ordering the temperatures changed suddenly and it arrived soggy, misshaped and the packaging was warm. I contacted the company and asked if it was safe to eat. I never received an email response (they later said one had been sent, I didn’t get it) but I did get a partial refund. Since I received the refund, I thought that meant the cheese wasn’t safe to consume. I discarded the cheese then asked about the remaining refund. I was then told the refund I received was for freight and the cheese was safe to eat. I’m completely confused why freight would be refunded if the product was safe. In total I’m out a lot of cost for cheese I never got to taste. As much as I’d like to experience this cheese, I won’t order again.
