Usually aged for 1 to 3 months, this semi-soft and flattened wheel of cheese is known for its buttery yet sweet flavor and rubbery texture. This cheese is ideal to use in sandwiches and cooking, but not so much for a cheese board. It's a popular substitute for recipes with gooey, melted cheese like mac and cheese or lasagna.

Ingredients & Storage Tips

Ingredient(s): Pasteurized cow milk, salt, starter culture, rennet, beta carotene
Storage Tips: Refrigerate any cheeses and meats in a drawer close to where most of the produce is kept. After each time that you slice the cheese, re-wrap it with fresh plastic wrap to extend the shelf life. While some chefs will freeze a slice of blue and then grate it over a salad before serving, Chef's Mandala doesn't recommend freezing cheeses in general.

Flavors & Uses

So we don't recommend gouda young for a cheese plate, but it's great as an ingredient in cooking and sandwiches. Sides that go well with it include a dab of nice Dijon mustard, ham and garlic pickles.
