Storage Tips: Refrigerate any cheeses and meats in a drawer close to where most of the produce is kept. While some chefs will freeze a slice of blue and then grate it over a salad before serving, Chef's Mandala doesn't recommend freezing cheeses in general.
For a cheese plate apir with a Delice de Bourgogne and Harbison or Vacherin. Other options are La Tur and Moliterno al Tartufo cheeses. Complimentary sides include a bold glass of Italian red wine or in a fondue with mascarpone and white truffle oil.
