The name comes from rigato or the Italian word for "ridged." This tube-shaped, Roman cut is similar to penne. However rigatoni is larger and has a straight, not diagonal cut. One of the more popular pastas used in baking or with thick, cream sauces. It's also a popular date night recipe when served with sausage. In keeping with all di Martino pasta, this cut is made in the city of Gragnano with 100% Italian durum wheat and local spring water.
