Another Jasper Hill Farm raw milk cheese, this cow's milk cheese is aged for 3 months in the caves of Vermont. Named after a local military road, this blue has an anise yet toasted nut-like quality that blends well with its creamy texture and peppery blue veins marbling throughout a cream-colored paste.

Storage Tips: Refrigerate any cheeses and meats in a drawer close to where most of the produce is kept. After each time that you slice the cheese, re-wrap it with fresh plastic wrap to extend the shelf life. While some chefs will freeze a slice of blue and then grate it over a salad before serving, Chef's Mandala doesn't recommend freezing cheeses in general.

Pairs well with a slab of dark chocolate, truffle infused honey, sweet Chorizo or a sweet Port wine. For a cheese board pair Bayley Hazen with a washed rind Langres and goat's milk Spanish Garrotxa. Or pair with a Midnight Moon and Comte cheese.
