From the Italian word "tagliare" meaning "to cut", the long ribbons look similar to fettuccine but are thinner only a quarter inch in length. Rumored to have been made in the 1800s by a chef who wanted a pasta that looked like his newborn bride's hear, it was initially made with egg. However today this cut is equally popular either way. Traditionally this cut is served rabbit, beef or veal in bolognese or less rich vegetable based sauces.
