So, it makes good sense all around for the environment and produces the best tasting decaf you've ever had!\u003c\/p\u003e\n\u003cp\u003eHere's a quick overview of how the coffee gets decaffeinated before it arrives to us for roasting:\u003c\/p\u003e\n\u003cul\u003e\n\u003cli\u003eUnroasted coffee is gently steamed for thirty minutes to open the pores of the coffee to allow the caffeine to be extracted.\u003c\/li\u003e\n\u003cli\u003eThe beans are then placed in a solution made from water and fermented sugar cane.\u003c\/li\u003e\n\u003cli\u003eThe solution bonds to the salts of chlorogenic acids within the coffee, allowing for the extraction of caffeine.\u003c\/li\u003e\n\u003cli\u003eThe solution is then drained (taking with it the caffeine) and refilled with fresh solution. Farming, harvesting, and processing are all done with the goal of creating a sustainable, responsible, and rewarding life for the farmers and locals.\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eAgroTropic, founded by conservation expert Pak Suki Anto, has its Sungai Lintang Coffee facility at the foot of Mount Kerinici. The group has been working with local farmers since 2009 and providing them with seedlings — it distributed 50,000 to 38 farmers initially and two years later distributed 180,000 seedlings to eight hundred local farmers, who intercrop the coffee with cinnamon, tea, potatoes, and vegetables.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eAgronomists also work with the farmers on planting, pruning, harvesting, and composting techniques, as well as on “alley cropping,” which encourages the planting of coffee trees spread two arms’ width apart, to allow in light and air. They also visit the farmers at least once a month, to check in and help them keep standards high.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eWhen ripe cherries arrive at the Sungai Lintang facility, the crews start cleaning and pulping them and put the fresh, wet parchment into water fermentation tanks for a minimum of 12 hours.
